So, you can make matsun from the milk of a cow, sheep, goat and even buffalo. If sourdough is not available, it should be replaced with Bulgarian yogurt or tan.

To prepare 1 liter of ready-made drink, you will need 1 liter of milk and 2 tsp. of sourdough. With milk, a certain procedure must be carried out: it must be heated almost to boiling temperature with the lid closed, then cooled to a temperature of 45 ° C and add whey. If you use tan instead of starter, then the ratios are slightly different. So, for 0.5 liters of milk you need to add 4 tsp. of tan.
