How to take a biscuit, quiche, cheesecake or muffin out of its mould

Perfectly cooked cakes can easily be deformed if you don't know how to take them out of the mold correctly. Careless movements can ruin the flawless appearance of a biscuit, cupcake or pie. Preventing a mistake is not difficult. All that is required is to properly prepare the mold before baking, choose the right recipe and follow the temperature regime.

Reasons for sticking

Biscuits, muffins or other baked goods stick for several reasons:

Failure to follow the temperature setting.

Too high a temperature causes a crust to form quickly on the surfaces, leaving the middle soggy. During the time the crumb is cooked, the product has time to stick to the rims, the bottom of the mold. To prevent this from happening, follow the temperature regime, use a thermometer.

Dirty mold

If the cooking utensils are not prepared for use, unwashed grease, pieces of dried pastry will cause dough to stick even to the non-stick coating. After each use, thoroughly clean the baking tray with a degreasing agent.

Insufficient baking time

When trying to remove an underbaked pie from the mold, problems arise because the dough sticks to the bottom, the rims. When the semi-finished product is completely ready, the biscuit shrinks a little, moving away from the walls of the form. Before taking out the bake, remember to refrigerate it for several hours.

Incorrect recipe

Pies, biscuits, muffins stick to the form due to non-compliance with the proportions of ingredients, replacing them with low-quality counterparts. It is difficult to remove the finished product from the form, if the recommendations for cooking, including the temperature of the products, speed, whipping time are ignored.

How to correctly remove baked goods from different molds

To ensure that baked goods not only taste great, but also look flawless, you need to learn how to get pies, cakes, biscuits from silicone, metal, ceramic and glass molds.

How to Take a Cheesecake Out of the Mould

From silicone molds.

Usually there is no difficulty in removing baked goods from silicone molds. But, if the cupcake does get stuck, give it time to cool, take the mold in your hands, knead the bottom, and pull the edges. Do not use a knife or other sharp objects so as not to damage the soft material.

You can gently separate the edges with a wooden spatula, pulling back on the elastic walls. Silicone molds do not need to be constantly greased. A thin layer of melted butter or lard is applied only before the first use.

From a metal mold

It is more difficult to remove a pie from a metal baking tray than from a soft elastic mold. There are several proven ways to do this:

  1. Leave the baked goods to cool for 10 to 15 minutes. Dip the bottom of the mold into a container of hot water. The dough will come away from the tray as the metal expands slightly from the heat.
  2. Separate the product with a knife or wooden spatula, first cutting out the edges, then the bottom, gradually moving from the edges toward the center.
  3. Place the tray and the bowl with boiling water in a closed confined space (a small cupboard, oven). The steam will cause the sides to lift slightly, making it easier for the baked goods to separate from the metal surface.
  4. Tilt the baking tray over the table at a 45 degree angle. If baked goods do not separate on their own, tap on the bottom, sides of the form.

If neither method suits you, cut the pie directly on the baking tray into portioned pieces, taking them out one at a time.

From a glass or ceramic mold

Ceramics and glass are fragile materials that require delicate handling. Do not knock the forms on the table and heavy objects hit on their bottom, too, is not recommended, so as not to form cracks, chips. Dipping in a basin of hot water is not an option either, since these materials do not expand when heated.

For easier removal of the dough, chill the mold in the refrigerator or keep it in the freezer for up to 6 hours. Cut the cake out of the glass or ceramic, helping yourself with a knife, silicone spatula.

From a split mold.

Do not use metal knives or spatulas, which can easily damage the non-stick coating, when separating the cake from the surfaces of the mold. It is not recommended to use a container with hot water, as the liquid will easily penetrate through the joints.

To remove the cake from the mold, wrap it with a towel soaked in boiling water, or separate the dough with a silicone spatula, wooden stick.

How to take out muffins, cupcakes and cupcakes

For baking muffins, muffins, cupcakes, manufacturers produce special forms made of different materials.

It is easiest to remove the disposable paper just before use.

It is not difficult to separate the baking sheet from the silicone. After it has cooled, turn it inside out. Separate the stuck products with a toothpick.

It will take more time to remove muffins, cupcakes from metal molds. The same methods are suitable for it as for the baking tray. To avoid having to separate the baked goods, at the risk of ruining the appearance, place paper forms in the metal notches before cooking.

What to do if the cheesecake sticks to the mold

To avoid such problems in the future, line the mold with oiled parchment or use a two-part "French shirt".

Grease the bottom and sides with butter, vegetable oil or cooking fat. Sprinkle the same flour you used to make the dough on top. If baking a chocolate biscuit, replace the flour with cocoa powder.
